Ah, Maggie, your post makes me dream of la belle France, where such things as rabbit and horse are sold in Lidl on a daily basis! Try that here and the righteous veggies would be picketing the shop!
In holiday times long ago, I used to stay in the Bastille area of Paris and there was a wonderful horse butcher there...superb steaks and great burgers. I also had a friend in Bourgoin who kept rabbits purely for the table: no nonsense about calling them Fluffy and suchlike!
